The Tasting

Appearance & Nose
01Vinum, dedicated to enhancing regional wines, presents a Chianti rooted in mid-to-high altitude hilly vineyards, south-facing. The winemaking, careful and conducted at controlled temperatures for 10-15 days with frequent pump-overs, aims to extract the best from the selected grapes, which in this case are a dominant 85% Sangiovese accompanied by 15% Cannaiolo and Ciliegiolo.

Palate & Finish
02Maturation occurs for at least six months in steel, followed by a further three months of bottle aging, for a wine of 12% alcohol, to be served between 18 and 20 degrees. This Chianti is magnificently suited to accompany traditional dishes such as pappa al pomodoro, ribollita, or a bistecca alla fiorentina.
