Curation Note

The Tasting

A guided note in three moments, by our curators

  1. Appearance & Nose

    01

The Vinum offers us a Chianti Superiore that comes from hilly vineyards with southern exposure, cultivated with Guyot and hand-harvested in mid-October.

  2. Palate & Finish

    02

The blend sees a clear prevalence of Sangiovese, joined by Colorino and a small percentage of Cabernet Sauvignon, with a potential alcohol of 14%. After fermentation at a controlled temperature, the wine ages for at least twelve months, 80% in steel and the remaining 20% in French oak barrels, followed by a further period of refinement.

  3. At the Table

    03

In the glass, it manifests with aromas that suggest fruity and spicy notes, then reveals a palate texture that pairs well with robust dishes of Tuscan tradition such as Bistecca alla Fiorentina, pici with cacio e pepe, or wild boar stew.
