Curation Note

Pale straw yellow with greenish reflections, lively foam and fine, persistent perlage. Aromas of white flowers, acacia, white peach, unripe apricot and Granny Smith apple, with citrus notes of lemon and pineapple, and hints of yellow grapefruit. On the palate, a soft and round attack, with a fresh citrus and fruity vein, and a mineral hint. Balanced evolution, pleasantly off-dry, with good structure and persistence. Elegant and lasting finish, with fruity and citrus notes that invite another sip. Ideal with mushroom puff pastries, smoked salmon tartlets, shrimp and avocado salad, or as an aperitif with Ascolana olives.
