Curation Note

The Tasting

A guided note in three moments, by our curators

  1. Appearance & Nose

    01

The Pecorino Colli Aprutini IGT is born from 100% Pecorino grapes from a single hectare in Canzano, at 300 meters above sea level, on clayey calcareous soils with abundant stony skeleton, trained in a hybrid row system. The vines, with an average age of over 5 years, are harvested between the first and second week of September, with a yield of 80 quintals per hectare.

  2. Palate & Finish

    02

On the nose, notes of contained intensity are revealed, while on the palate, a savory and mineral profile is perceived.

  3. At the Table

    03

It pairs splendidly with ravioli with butter and sage, marinated anchovies, and spaghetti with clams.
