Curation Note

The Tasting

A guided note in three moments, by our curators

  1. Appearance & Nose

    01

The roots of this Pecorino are deeply embedded in the territory of Canzano, between 300 and 400 meters above sea level, where the calcareous-clay soils, rich in skeletal structure, give the wine a solid mineral structure.

  2. Palate & Finish

    02

Manual harvesting, with careful selection of the bunches, brings grapes to the cellar that ripen between late August and early September, with controlled yields per hectare. On the nose, scents reminiscent of Mediterranean scrub and citrus notes are perceived.

  3. At the Table

    03

On the palate, minerality blends with lively freshness, inviting pairings with rockfish dishes, spaghetti with clams, or a warm seafood salad.
