Appearance & Nose
01The Chianti Classico DOCG, by regulation, requires the predominance of Sangiovese, but this example from Le Palaie presents us with a variation based on Cabernet Sauvignon, a grape variety that confers a decisive olfactory and gustatory imprint.

Palate & Finish
02In the glass, an intense ruby red is perceived, a symptom of youth and concentration. On the nose, notes of ripe fruit emerge along with a certain spiciness typical of the grape, with a mineral undertone that evokes the Tuscan terroir.

At the Table
03On the palate, the structure is supported by good acidity and a tannic texture, a prelude to possible pairings with robust dishes such as a bistecca alla fiorentina or pasta with wild boar ragu.
