The Tasting
-
Appearance & Nose
01From the heart of the province of Chieti, nestled between the Maiella National Park and the Adriatic Sea, this superior Pecorino reveals a precise territorial character. The hilly soils, with an average altitude of 230 meters above sea level and a clay-limestone predominance, lend the wine a distinctive structure and minerality.

Palate & Finish
02The winemaking process, with soft pressing followed by a brief cold pre-fermentation maceration and low-temperature fermentation in steel, preserves the freshness and primary aromas of the grape variety. Aging for about 4-5 months on fine lees, without bâtonnage, then imparts notable olfactory and gustatory complexity, with a pleasant sensation of softness. In the glass, it presents a white of remarkable vivacity, ready to accompany fish dishes, grilled seasonal vegetables, or fresh cheeses.
