The Denominazione di Origine Controllata Trento DOC requires that its sparkling wines, such as this Antares Riserva Extra Brut Millesimato, be produced exclusively in the Trentino territory with at least 30% Chardonnay grapes, which in this case are the only variety used. To the eye, it presents a beautiful pale straw yellow color, enlivened by a fine and continuous perlage.

The nose reveals delicate notes of yeast and fruit, while on the palate, a vibrant acidity is perceived which, combined with a slight minerality and its extra brut nature, makes it an excellent accompaniment for raw fish appetizers, oysters, and steamed langoustines.
